Broccoli & Cheese Soup

Hi Fibro fighters! I have borrowed a recipe from Cooking Without Limits – with her permission of course. It is her challenge to broccoli shirkers that her soup recipe will convert you. So I will share this recipe and when I do try it in my kitchen, I will definitely update you (Though I am sure it will be awesome)



500 g broccoli,  chopped into florets, trunks pared and chopped
1 big potato
2 tablespoons butter
3 cloves garlic, chopped
1/4 teaspoon ground nutmeg
3 cups shredded sheep cheese
1/4 cup of goat cheese
1/2 cup sour cream
1.2 l water


Steam the broccoli and the potato. In a bowl, add cooled broccoli and potato, butter, sheep cheese, goat cheese, garlic, nutmeg and sour cream. Puree soup with the immersion blender or in  a blender and add water till you make it smooth. Taste and  adjust seasoning. Can be served cold or hot with cheese or croutons. Enjoy!
