Tofu Salad

You have gotta try this. It’s so simple but so delicious. The flavours are sweet and spicy – in fact almost pickle-like.

I hadn’t made this dish in a long while but recently my mum made it. My son, Steven had dinner with my parents that night and mentioned the fantastic tofu salad she had served. I being me, immediately called to ask for the recipe. Well, mum laughed and reminded me that she had gotten the recipe from me.

I decided that if Steven, my-meat-meals-only son liked it, then my other two might like it too.

So I made it! After probably 10 years and since then, we have had it three times.

So here is the recipe and I hope your family will enjoy it as much as my family does.

Let’s begin with the sweet chilli sauce. Although you can use a store bought sauce, I would still like to share the recipe of the sauce with you. You can control the heat level much better if you make it from scratch.

Oh yes! I do want to mention that I do not use birds’ eye chillies for the sauce.  I use the regular 4-5 inch red chillies and I use the birds’ eye chillies as a condiment


10 red chillies

3-4 tablespoons vinegar

1 cup white sugar /or to taste

1 tablespoon soy sauce /or salt to taste

just want to mention that Thai fish sauce is used by some, but I don’t like the smell of it in this dish and also like keeping it vegetarian.

3 cloves garlic


Cut the chillies lengthwise and de seed half the quantity while leaving the seeds in for the other part. Combine these ingredients with some water and grind them in a food processor.

In a skillet, add some oil and cook the ingredients. Stir frequently allowing the sugar to melt and the flavours to blend… and also so the sugar doesn’t burn.

You can and should taste it at this point, add salt or a little more soy sauce if needed and you can add either chilli flakes or any hot sauce to increase the heat.

Once it has thickened slightly, stir

1 teaspoon of corn starch with some water and add to sauce. Allow to thicken further. Do not over-boil as it will continue to thicken as it cools. Store in the refrigerator. It keeps well. You can always add water to it to get the consistency you want
