Hey my loves! As promised, I am uploading the recipes for the “Pantry Essentials & Recipes Video.” All these are no cook solutions for quick meals. These recipes use pantry ingredients as a substitute to your first choices.
KIDNEY BEAN HUMMUS
Ingredients
1 can Kidney Beans – drained & washed
1 Tbs Tahini
1 tsp each Cumin Powder, Cayenne Pepper, Garlic Powder and Onion Powder
1/2 Lemon – juiced
Salt to taste
Blend all the ingredients in a food processor, adding a teaspoon of water if needed. Garnish with Chilli Flakes and chopped Coriander leaves.
Stores in the refrigerator for a few days.
Serving Suggestions:
Serve with crudités and crackers
Spread on tortillas and fill with chopped lettuce, pico de gallo or salsa, shredded cheeses, grated carrots and any other vegetables of your choice.
SPICY RICE KRISPIES
Ingredients
2 cups Rice Krispies
1 large Potato – boiled & chopped
1/4 cup roasted peanuts
Chop finely:
1 small Onion, 1 Tomato, 1/2 Cucumber, 2 Green Chillies and 5 sprigs coriander leaves
1 tsp Cumin powder
Salt, Chilli Powder and Lemon Juice to taste
Into a mixing bowl, add tomatoes, potatoes, onions, cucumber and green chillies. Add salt, chilli powder, cumin powder and lemon juice.
Add peanuts and Rice Krispies.
Toss well and serve immediately.
TUNA SLAW
Ingredients
Finely slice carrots, cabbage, red cherry radishes, onions and any other vegetable of your choice.*
1 can Tuna – drained and flaked
2 Tbs Greek Yogurt
Salt and Lemon Pepper seasoning to taste.
* Use a mandolin to achieve consistent and fine slices.
Into a mixing bowl, add the finely sliced vegetables. Add the greek yogurt and seasonings. Mix well.
Add the Tuna and serve on toast or as a salad.
MALAYSIAN ROJAK
Ingredients
Rustically chop Turnip, Cucumber, Pineapple, Toasted tofu puffs and any under ripe fruit such as mango or papaya.
Crushed peanuts
Mix 1 cup Tomato Sauce, 2 Tbs Brown Sugar and a splash of soya sauce. Add all ingredients and 2/3 of the crushed peanuts. Toss well.
Garnish with the remaining crushed peanuts. Serve immediately.
FRUIT CREAM
Ingredients
1 can Assorted Fruits in sugar syrup
1 can Double Cream
Sugar to taste
2-3 Tbs Evaporated milk
Drain the can of fruits, and mix in the sugar and cream. Add evaporated milk to loosen. Refrigerate for at least 2 hours. Serve cold.
