This red sauce is a sweet and sour chutney which goes super well with samosas and pakoras. If you are making samosas or are trying out my pakora recipe, then make this sauce a day or two ahead in anticipation.
2 cups water
2 Tbsp tamarind paste
1 cup sugar
Salt to taste
1/4 tsp ginger powder
1 tsp crushed chillies
1 tsp corn flour
- Place water in a pot and add in the sugar. Once melted, add the tamarind paste.
- Remove from flame and sieve the mixture.
- Return to the stove and add in both the spices.
- Once well mixed, make a corn flour slurry and add to the pot. Allow to thicken slightly.
And there you have it – the perfect accompaniment to your fritters and samosas.
