EASY MINESTRONE SOUP
This soup is just so simple to make. It took me all of 15 minutes and I only used one pot!
Chop an onion and 3 cloves of garlic and sauté them in some olive oil. Add in some carrots and 1 chopped tomato and continue to sauté. Then add in 1 can of tomato soup and the same amount of mushroom or vegetable broth. Also add in some oregano (dried or fresh) and allow to simmer.
Add in 1 can of kidney beans and continue to simmer until the carrots are fully cooked.
Once cooked, add in 1/2 a packet of cooked elbows (al dente) and allow to simmer for another minute or so.
Garnish with chopped coriander and serve hot.
One additional yet optional ingredient is to add in some dried basil when simmering and then some fresh basil at the end. I didn’t have any basil at home so I didn’t use any but if you like basil and have some on hand, then go for it!
